Lemon Cake

1 large lemon (juice and rind)
1 ½ cups all purpose flour
1 cup sugar
½ tsp. salt
1 tsp. baking soda
6 tbsp. vegetable oil
1 tbsp. lemon juice
1 tsp lemon extract
Cold water


Preheat oven to 350o F. Put flour, sugar and baking soda into a mixing bowl. Mix well. Then grate all lemon rind into a measuring cup. Cut lemon in half and squeeze the juice from both halves into measuring cup. Add cold water to rind and lemon juice mixture until you have filled up on cup. Pour lemon juice mixture into your bowl of dry ingredients. Add oil, lemon extract, lemon juice (from bottle not mixture) and mix well Mixture should foam. Pour into ungreased cake pan and bake 30-35 minutes. Ice or serve with custard if wanted.
