Cashew Cheese Sauce

Large       Small
2 c.              ½ c.           water
2c.               ½ c.           cashews
2 tsp.          ½ tsp.         salt
1/2 cup        2 Tbsp.      oil
10 Tbsp.      2 ½ Tbsp.   lemon juice
12 oz.           3 oz.          sweet roasted peppers    
2 tsp.          ½ tsp.         onion salt
2 tsp.          ½ tsp.         garlic salt
6 Tbsp.        1 ½ Tbsp.   nutritional food yeast flakes
1/4 cup        1 Tbsp.      oats
1 can            ½ can        chili peppers – optional for a nacho variation

Blend all ingredients together in blender until smooth.


In place of the sweet roasted peppers you could also use canned pimentos - 16 oz. for a large recipe and 4 oz. for a small recipe; or tomato paste – 1 can for a large recipe and ¼ can for small recipe.  Alter water depending on which “red” color item you’re using and how thick or thin it is (for example if you use the tomato paste you’ll need more water; if you use the roasted peppers or the pimentos the water amount should be just about right as listed.  We definitely prefer the taste of the roasted peppers).
